Dr. Bhawisha Joshi's healthy and
scrumptious fenugreek salad recipe.
It is high in fiber, packed with vitamins,
minerals like iron and calcium and good fats.
Ingredients
1.
Fenugreek leaves (methi - 1
bundle)
2.
Tomatoes (optional)
3.
Sesame seeds
4.
Groundnut
5.
Ginger
6.
Maple syrup/ Honey
7.
Lemon juice

Salt
Recipe
Thoroughly wash and sort the fenugreek
leaves and keep it aside. Dry roast 1 to 2 teaspoons of sesame seeds in a pan
for few minutes and take it out. Now in a pan heat some oil, add in finely
chopped ginger and saute it for a minute or so. Once the ginger is sauteed
well, switch of the gas and then add in the roasted sesame seeds and groundnut
and mix everything well.To the mix add 1 teaspoon of maple syrup or honey, 1
teaspoon of lemon juice and salt as per your taste and mix everything well. Now
pour this dressing over the sorted fenugreek leaves and finally give everything
a quick mix. You can also add finely chopped tomatoes along with the fenugreek
leaves if you like, to make the salad a bit tangy.
