Dr. Bhawisha Joshi's mouthwatering
and nutritious Soya Biryani recipe.
Ingredients
(serves 2 to 3 people)
1) Soya granules (50 gms)
2) Brown rice (50 gms)
3) Veggies: green peas, 2 large onions
4) 1 cup Yoghurt/ soya yoghurt/ Lemon juice
for marination
5) Spices: Red chili powder, turmeric
powder, shahi biryani masala, salt
6) Ginger and garlic (optional)
7) Oil/ Ghee
Recipe
Boil the soya granules in hot boiling water
for 5 minutes. Drain the water and squeeze them well. Now marinate them with
yoghurt, red chili powder, turmeric powder, shahi biryani masala, ginger-
garlic paste and salt. Keep it aside for 10 to 15 minutes.
Take 3 tsp of oil or ghee in a pressure
pan/cooker. Add in the finely chopped
onions and saute them until they become translucent. Then add in the peas and
saute them well along with the onions. Once they are sauteed, add in the
marinated soya granules and pre-soaked rice. (P.S. - Soak the rice for at least
an hour before cooking so that the rice grains are well separated or fluffy. The
proportion of rice to water for the soaking is 1:2. Do not discard this water,
use the same water for cooking the biryani.)
Add in more water if required and salt as
per your taste. Cook the biryani in the cooker for about 15 to 20 minutes (i.e.
3 to 4 whistles). Garnish the biryani with finely chopped coriander leaves).
Delicious soya biryani is ready for you to enjoy. You can also add in as many
veggies as you want.
It is high in protein and fiber content. It
is a fancy exotic dish, quick to make and hassle free. A lot of people cannot
digest soya, but when cooked in this form, it is easily digestible and quite
healthy.
