Dr. Bhawisha Joshi's healthy , quick and exotic Thai salad recipe.
Ingredients
Veggies
1) Finely chopped red and white cabbage
2) Red and yellow bell pepper
3)Baby corn
4) Green onion
5) Shredded broccoli, carrots, beetroot
6) Finely chopped raw mushrooms
You can use your own combinations of
veggies - you can also add finely chopped spinach and lettuce.
Dressing
1) 3-4 tablespoons of peanut butter (if you
are allergic to peanut, you can use almond butter or cashew butter).
2) 2 to 3 teaspoons of soya sauce.
3) Rice vinegar or lemon juice (1/2
teaspoon).
4) Maple syrup/Jaggery/ Honey (minimal
quantity for sweetness - I don't add this because my peanut butter already has
maple syrup in it.)
5) Finely chopped green chillies/ black
pepper powder/ chili flakes - this is optional.
These quantities can be increased or
reduced as per your taste and consistency requirement .
Blend in all the above ingredients so that
the dressing becomes liquidy and creamy.
Add this dressing to the chopped and
shredded veggies and give it a good toss.
